BBQ Gamebird Poppers!


BBQ Gambird Poppers Recipe

This is one of our favorite ways to enjoy a variety of game birds and share them with guests.

2 pounds of Pheasant Breast (can substitute any wild game meat) cubed into bite size pieces

1 Large Jar Jalapeno Slices (the kind for nachos in brine)

1/3 Cup Soy Sauce

1-2 Pounds of Bacon cut into 1/3’s

Hi Mountain Cajun Seasoning (can substitute a milder seasoning)

Your Favorite BBQ Sauce

Toothpicks

Place cubed breast meat into a plastic bag or container and completely submerge with juice from the jalapenos and pour in ½ of the jalapeno slices. Stir in the 1/3 cup soy sauce and let marinate in the fridge overnight.

Pre-Heat Oven to 375 degrees

Wrap each piece of breast meat with one or two jalapeno slices in 1/3 strip of bacon, and secure it in place with a toothpick. Then place them in a 9” x 13” pan.

Once all pieces have been wrapped and placed in the pan, lightly coat them with the Hi Mountain Cajun Seasoning.

Place pan in the oven on a middle rack and cook for 20-25 minutes, until the bacon is starting to get crispy.

Remove the pan from the oven and turn the temperature up to Broil.

Move the top rack to the top setting of the oven.

Coat all pieces with a generous coating of BBQ Sauce.

Return the pan to the oven for 5-10 minutes, until the sauce starts to tighten and solidify.

Remove from oven, serve and enjoy.
